Recipe: Orecchiette With Mixed Greens And Goat Cheese

This is one of my favorite go-to recipes. It’s so flavorful and easy to make, plus you can adjust all the ingredients to taste and preference.

Ingredients

1 cup dry orecchiette pasta

2 cups mixed greens or butter lettuce

1 handful of sun-dried tomatoes, chopped

3 tablespoons crumbled goat cheese (can add more/less to taste)

2 tablespoons grated Parmesan, plus more for garnish

Salt + pepper

Directions

Bring a medium pot of salted water to a boil over high heat. Add the pasta and cook per instructions. Drain, reserve 1/2 cup of the water.

Mix the salad greens with the sun-dried tomatoes, goat cheese, and Parmesan (all these things you can really add to taste).

Add the warm pasta, plus the 1/2 cup of reserved pasta water. Toss everything in bowl, then add a pinch of salt and pepper, and garnish with some more parmesan cheese.
